You can find more information about the NMEA standard at NMEA.org. The only difference is what's supported as part of the NMEA data sentence. Most products use NMEA 0183 v2.01 support or above.

You can, but you need to purchase it. Check out this site and this but unless you're looking to develop GPS using NMEA or SiRF then this will probably be too technical.

Not quite - NMEA 0183 v2.3 introduces a mode indicator to some of the sentences you mentioned. For more information see here (this is part of one of the pages Dave provided a link for earlier in the thread).
