There are (or at least used to be) a few roads about with distance markers accurately placed on them. The A34 south of Reading used to have such markers. They start with a small yellow disc and each 1/4 mile had a quarter of red marked on it - so at the end of a mile it was all red. I think they were there for speed checking? I used to pass them regularly in the 80's and 90's - don't know if they are still there though. All you need then is an accurate stop watch and a passenger to operate said watch. Drive at a constant speed as indicated by the GPS and mark the split times for each quarter (guess they may be kilometers now-a-days). You can then see how accurate the GPS is (and also your car speedo).

Don't motorways have accurate distance markers at the side of the road? (those little blue/red/white posts?)

100 metres, they carry a location number like 75.4, meaning 75.4 Km from somewhere. And a little phone sign with an arrow showing which direction to walk to get to the closest emergency phone. We (motorway maintenance) used to use the numbers to say where something (dead rat, suitcase, box of mackerel) was. You could count them (or simply all the 75.0, 76.0, 77.0 ones), then convert kilometres to miles. But I still prefer sheep and Andy's suggestion of cylists has some attraction.
