I've been running TomTom MN5 on a Mio P350 for the past year or so from a 512MB card. I've now installed the UK, France and Benelux maps onto a 1GB card; is there a simple way of copying my favourite destinations from one to the other?

There would be no reason to, as the favourites/destinations only apply to the Map they were created in and for.
You can't navigate to a favourite/destination across maps.

The problem is that the FAQ is relevant to changing Versions.
This is a question of using a location on one Map and transferring it to another Map that doesn't cover the save geographic area.

Or is he by any chance merely moving up from 512 to 1GB, keeping the same mapping that he already uses?

True.
I think Dennis is right, the OP has done a new install to the new card rather than just a card copy  
I think my pointer to the FAQ that mentions the CFG file, provided the answer, but entirely by accident
