They are the various types of processor that have been used in different PocketPC's in the past. All current models now use the StrongARM processor (ARM) inclusing the 2210.

ARM= most Pocket PC's from Pocket PC 2000 OS onwards
MIPS = mostly older Casio CE3 or below devices (pre 2000)
SH3 = mostly older HP's CE3 or below devices (pre 2000) |

To amplify further - Microsoft specified that all devices running Pocket PC 2002 must use an ARM processor, and they never produced a final version of Pocket PC 2002 for MIPS and SH3, even though the core Windows CE operating system is still available for those processors.
There's very few SH3 and MIPS based Pocket PCs about now - even in the second hand market.
