Is the latest map for the one a different version than the new update recently released? I've read discussions talking about v632, my new one only has v605 - am I behind already?

I believe that 605 is the latest version for the one.

I think that the 632 is the version for the 700 which don't forget has street level mapping for the whole of Europe so is probably on a separate update path.
