To switch the view of the extensions on or off:
In Windows Explorer (or My Computer), go to the Tools menu at the top.
Select Folder Options.
Select the "View" tab
Scroll down to "Hide extensions for known file types".
Tick or un-tick the box to your personal preference.

But I'm not sure why you want to hide them again!
We get a lot of confused people on the forums because there is often often a situation where there are several files with exactly the same name, but they are of entirely different file types
For example with our speed camera files, you may have:
pocketgps_uk_gatso.ov2 - the data file with the camera locations
pocketgps_uk_gatso.bmp - the camera symbol you see on screen
pocketgps_uk_gatso.ogg - the warning sound or voice
With the extensions hidden, they will ALL just show up as "pocketgps_uk_gatso" - not very useful when you are trying to tell them apart to maybe delete or modify just one of them!
The ONLY drawback to having them visible is that when you right-click on a file to rename it, the whole name (including the extension gets pre-selected to be replaced as you type. I think that's what you may have been doing?
But all you need to do is click somewhere in the name itself and rename just the part before the dot - just like using a word processor. It's simple when you get used to it. _________________ "Settling in nicely" ;-)

You're probably right Andy, and possibly not helpful to the OP, but Windows 7 only selects the name on right click, not the name+extension
