I am trying to 'force' a particular route, one which the software does not choose.
I have tried to set up an itinery, but can't quite seem to make it work.
Is there some sort of way of 'selecting' roads and then get TomTom to put the route together for me? ... or does this facility not exist and I have to use their choice.

If you've put together an Itinerary, you have to choose the Plan and/or Navigate options from the Itinerary screen. You can also use the Itinerary screen to reorder drive-bys, change a destination and, by tapping and holding, load and save Itineraries.
Does that get you going?

Thanks for your thanks. I've got most of what's needed to answer most questions in my head and I'm an 80wpm+ typist, but it still takes some time to answer people's questions.
The other thing worth knowing - if you're using an Itinerary, there's an extra option in the Navigate To screen - Itinerary Destination. You can use that to "skip" a point in your Itinerary when on the move.
It doesn't help that the documentation of the Itinerary feature is so poor - a shame, as it's so powerful.
